1. Fry eggplants until golden color.
2. In a medium pan, heat 2 tbsp of oil over medium heat. Add onion, green pepper, and stir for 5 minutes. Add tomatoes, garlic, salt and pepper. Mix well.
3. Arrange eggplants in a tray brushed with oil. add onion mixture and vegetables, then add shredded mozzarella. Place in oven for 20 minutes, until cheese melts.
